Those who have grown up in this Mekong River area have enjoyed many cakes such as tam cake, salty cake, bloating fern-shaped cake … But each type of cake has different processing methods, even though they are made from rice flour.

 

This cake is created by two main ingredients, tam cake and bi.

The cake was made by hand through human dexterity, it was called “Hand made cake”, meaning that the flour was prepared in a dosage, stirring the flour, forming the fiber and steaming again.  Nowadays, the powder is pressed by mold, much faster, but the quality of the cake remains unchanged.

As for doing Bi, there is nothing too cumbersome: the meat is seasoned and fried; pig skin is boiled,  then cut in slice, mixed together with thinh (roasted and grind rice ), fresh minced garlic, salt, sugar …

When enjoying, people often put the cake on the plate with a little cucumber, herbs, fatty coconut milk, on top of add onions and be eaten with sweet spicy fish sauce. The soft taste of the cake blends with coconut water, crispy bi, sweet meat and the vegetables has created a great dish. In particular, the cake is less feverish because the ingredients are not too much substance.

Tam Bi Cake in Can Tho has a very special flavor: the cake is always hot due to being steamed on a charcoal stove. When you see directly you will feel delicious.
